Welcome to The Original Ninfa’s, where it all began. In 1973, Mama Ninfa Laurenzo took the humble beginnings of her family’s struggling tortilla factory in Houston’s East End and turned it into a culinary revolution. She started grilling skirt steak, placing it into handmade flour tortillas, and serving it to her community. Unbeknownst to her, this simple yet delicious creation would change the landscape of Tex-Mex cuisine forever.

The Birth of Fajitas

The dish that Mama Ninfa created was the now-iconic tacos al carbon, which the world would eventually know as fajitas. This beloved meal, featuring grilled skirt steak wrapped in fresh tortillas, became the bedrock of Tex-Mex cuisine. What started as a way for Mama Ninfa to provide for her family grew into a culinary tradition that continues to influence the food industry today.

Mama Ninfa’s Legacy

Though we lost Mama Ninfa in 2001, her influence lives on in every dish we serve. The love and fierce skill she put into her cooking are still very much a part of our kitchen today.
