Rustic 21 Bistro offers an authentic experience with Brazilian-inspired cuisine, showcasing the rich flavors of Brazil in a contemporary setting. Our journey began during the pandemic with the creation of our “Menu do Chef” project. Originally offering special weekend dishes, this initiative quickly evolved into a full catering service. The overwhelming response turned our dream into a thriving reality.

The Chef’s Story

At the heart of Rustic 21 Bistro is Chef Rodrigo Demarco, who was born in São Paulo, Brazil. From a young age, Chef Rodrigo was immersed in the world of gastronomy, working alongside his uncle, Chef João Carlos Demarco, in catering services. His passion for food led him to start his first business—a pizzeria—at the age of 16. Over the years, his love for cooking expanded, and he started several restaurants influenced by Italian culture and his family. Chef Rodrigo’s culinary journey took him to the prestigious Senac Hotel Management School, where he expanded his knowledge of world cuisines. After 14 years in the food and beverage industry, working with major events and concerts, Chef Rodrigo found his true calling—sharing the essence of Brazilian cuisine with the world. His goal is to evoke the affective memory of remarkable flavors in every dish he creates.
