About Us – Don Artemio

Don Artemio offers a unique and upscale Mexican culinary experience that brings the flavors of Northeast Mexico to life with a contemporary touch. Our restaurant is designed to reflect the rich cultural heritage of Mexican gastronomy while incorporating modern elements to create a one-of-a-kind dining environment.

A Living Expression of Mexican Gastronomy

Mexican cuisine is a vibrant and living expression of centuries-old cultural traditions. At Don Artemio, we strive to celebrate and preserve this rich heritage while elevating the dining experience with modern techniques and innovative dishes that indulge the palate.

Architectural Inspiration

Our restaurant’s architectural design is inspired by the old houses of Saltillo, Mexico, known for their use of clay bricks and traditional elements. We incorporate icons of Mexican culture, such as the Sarape de Saltillo and wines from Coahuila, to create an immersive and contemporary Mexican atmosphere for our guests to enjoy.

Local and Authentic Ingredients

At Don Artemio, we pride ourselves on incorporating local ingredients from both Fort Worth and northeastern Mexico, such as kid goat and nopales, to create authentic dishes that showcase the true flavors of our heritage. We blend traditional Mexican ingredients with modern culinary techniques to deliver an unforgettable dining experience.

A Visionary Creation

The concept of Don Artemio is born from the passion of Chef Juan Ramón Cárdenas, a gastronomic researcher, author, and food industries engineer. With more than 15 years of experience, Chef Cárdenas has brought together culinary expertise and cultural pride to create a unique dining space. The restaurant’s name was suggested by renowned Mexican writer and chronicler Don Armando Fuentes Aguirre, “Catón,” who entrusted the vision of Don Artemio.

Architectural Design – Inspired by Saltillo

The design of Don Artemio is inspired by the traditional Mexican houses of Saltillo, which often feature a central patio surrounded by rooms. In Mexican culture, the kitchen is considered the heart of the home. The architectural design by Luis Alberto González Díaz de León celebrates this concept, incorporating elements such as clay, textiles, and traditional materials to create a visually stunning and culturally rich space.

Bringing Mexican Heritage to Fort Worth

With love for Coahuila as a central theme, the project began to take shape, with architects and chefs collaborating to bring the essence of Saltillo to Fort Worth. One of the standout features of Don Artemio is the Cava del Desierto, a room made entirely of brick, representing the desert landscape and housing over 30 exclusive Coahuilense wine cellars. The space is illuminated by a central lamp symbolizing the sun.

The Journey to Fort Worth

When the restaurant began to take shape in Fort Worth, trucks loaded with clay pots, bricks, looms, art pieces, and wood arrived, adding to the excitement and anticipation. The use of materials such as brick, clay, and textiles is a signature of the project, creating a unique and varied atmosphere in each space of the restaurant.

A Tribute to Corn – The Soul of Mexican Cuisine

At Don Artemio, we honor the essential role that corn plays in Mexican cuisine. Corn nourishes the soul of the Mexican people and serves as a foundation for many dishes. It is a result of centuries of care and dedication from those who cultivate it, and its wide variety provides endless culinary possibilities.

A Cultural and Culinary Heritage

Corn has been a vital part of Mexican culture for over 10,000 years, with more than 60 varieties found throughout the country. At Don Artemio, we celebrate this versatile ingredient and its deep connection to Mexican culinary traditions. Corn is not only a vital food source but also an important cultural symbol that embraces the soul of the people.
