After graduating from the prestigious César Ritz Hotel Management School in Switzerland, James pursued culinary arts at Johnson & Wales University in Providence. His career took him to renowned restaurants and hotels in New York, Boston, and San Francisco, including Eleven Madison Park, Jean-Georges, and Gurney’s. In March 2014, James took the bold step of opening Cedro, bringing his expertise and passion to Austin. His hands-on approach to engaging diners through exceptional food, drink, and service has made Cedro a cherished destination. In 2016, James expanded his culinary journey with the opening of Mia Italian Tapas & Bar in Domain Northside, continuing to share his love for Italian food with the Austin community.
